Protein Jelly Recipe

This light, fruity protein jelly turns flavoured clear whey isolate into a refreshing dessert with far more protein than ordinary jelly. It has the familiar wobble and sweetness of a jelly pot, but each serving provides roughly 10–12 g of protein, depending on the products used. Choose any clear whey flavour you enjoy, then pair it with matching fresh fruit if you like. The jelly needs only a few minutes of preparation before chilling until fully set.

500 ml cold water, divided

50 g flavoured clear whey isolate

12 g powdered gelatine

Fresh berries, to serve (optional)

Method

Protein Jelly Instructions

  1. Bloom the gelatine: Pour 100 ml cold water into a heatproof bowl. Sprinkle the powdered gelatine evenly over the surface and leave it for 5 minutes.
  2. Dissolve the gelatine: Heat another 100 ml water in a small saucepan until steaming. Remove it from the heat, add the bloomed gelatine and stir until completely dissolved. Leave to cool until lukewarm.
  3. Mix the protein: Add the remaining 300 ml cold water and clear whey isolate to a shaker. Shake until combined, then leave it briefly so the foam can settle.
  4. Combine: Slowly stir the cooled gelatine mixture into the clear whey drink. Skim off any remaining foam for a clearer jelly.
  5. Chill: Divide the mixture between four small glasses or jelly pots. Refrigerate for at least 4 hours, or until completely set.
  6. Serve: Top with fresh berries, if desired, and serve chilled.

Tip: Clear whey isolate works better than regular whey powder because it produces a lighter, more traditional jelly texture.

Tip: Avoid adding fresh pineapple, kiwi or papaya to the jelly mixture, as they can prevent gelatine from setting properly.
