
Baked protein Weetabix turns a simple breakfast cereal into a warm, cake-like dish that is ready in under half an hour. The Weetabix is softened with milk, then mixed with egg, vanilla protein powder and baking powder to create a light, satisfying base. Fresh berries add bursts of sweetness, while Greek yoghurt makes a cool, creamy topping. It is an easy high-protein breakfast for mornings when you want something more comforting than a cold bowl of cereal.

Ingredients

· 2 Weetabix
· 100 ml milk
· 1 egg
· 25 g vanilla protein powder
· ½ tsp baking powder
· 50 g mixed berries
· 2 tbsp Greek yoghurt
· 1 tsp honey (optional)
Method

- Prepare the oven: Preheat the oven to 180°C/160°C fan/gas mark 4. Lightly grease a small ovenproof dish or large ramekin.
- Soften the Weetabix: Crumble the Weetabix into a mixing bowl. Pour over the milk and mash everything together until evenly combined.
- Make the mixture: Add the egg, protein powder, baking powder and honey, if using. Stir thoroughly until the egg is fully incorporated and no dry protein powder remains.
- Add the berries: Gently fold half of the mixed berries through the mixture. Transfer it to the prepared dish and scatter the remaining berries over the top.
- Bake: Bake for 15–20 minutes, until risen, lightly golden and set in the centre. Leave to rest for 2 minutes, then top with the Greek yoghurt and serve warm.
Tip: Protein powders vary in sweetness, so taste the mixture before adding the honey.
Tip: Avoid overbaking the Weetabix, as protein powder can make the finished dish dry.
